Can you add tartaric acid or other acid post ferment/stabilisation for flavouring?
 
yes you can. Actually, you should always check your ph/acid after fermentation to see if you do need to adjust.
 
Julie is correct. In fact, PH adjustments can/should be made when the PH level requires it.

I always use Tartaric acid. This acid is naturally found in many fruits, especially grapes. For grape wine, I tend to stay away from citric acid or acid blends.
