Hi all- I was wondering if its ok to add acid during fermentation? I was making an acid adjustment on 2 juice buckets on Sat. to het my T/A to .60-.70 and ran out of tartaric acid. I was able to make half of the adjustment prior to fermentation kicking off. Can I just add the additional amt tomorrow once my local store is open and I can purchase? Thanks.

I would wait until after fermentation.

I am sure that other may disagree, but my thinking is that it would kill at least some of your yeast before the acid is fully mixed into the wine. Better to wait.

I agree with john wait till after. You will be just fine. If this is a red and you are going to malo. Make your adjustment before malo.
