    Other Eclipse Nebbiolo

Trying to find a good Neb kit to make and that’s available. Did a search on this forum and saw positive reviews of this kit. Can’t tell if the kit still comes with grape skins or not though. Anyone done this recently? Any other Neb recommendations? Thanks

Cellar Craft Walla walla cab merlot

Man, made the Walla Walla Cab Merlot about two years ago and I've got only five bottles left. Can't keep my wife's hands off of it. Guess it's time for another batch, will hide the remaining bottles. What a great kit. We r drinking one now and it's phenomenal.

    Other SO2 levels in barrel

I have a 5.3 gallon barrel that I use to age my kit reds. It's almost neutral and I've ran maybe 6 kits though it so far. All have turned out great. I don't have a method yet to test SO2 levels and unfortunately have been sort of winging it, adding 1/4 teaspoon every month. So far, I've been...

RJ Spagnols Red mountain valley cab

Cracked a bottle of the red mountain valley cab last night. Just over two years old and it was fantastic! Wish they still made this

    Barrel age

I have a vadai 5.3 gallon that's about neutral. My eclipse Shiraz has been aging in it for almost four months, because my cab on deck hasn't completed clearing. I should be able to rack the Shiraz from the barrel next month and rotate the cab into the barrel. I've never heard of a wine remaining...

    Cellar Craft Amarone

Well, it's been almost 16 months since I pitched the yeast on the CC Showcase Amarone. It's been developing nicely in bulk through the months. It had some moderate tannin additions and lived for three months in the Vadai. Tonight, I'll draw my final sample and determine whether a little...

    WineXpert Eclipse Sauvignon Blanc

About to start this kit. Any tweaks recommended or just let it fly? Heard of using some grapefruit essence is bulk and maybe a little acid blend. Anything else? I need this for the latter summer to drink so hopefully I can have it ready for consumption by then, at least a case of it

    Barrel neutrality

How long or how many wine rotations for a 20 liter to become neutral?

    WineXpert White wine

Got an empty car boy and thought I'd do a white wine, as it's been a little while. Got my eye on the eclipse Sauvignon blanc and the eclipse Riesling. Any thoughts on the two?

    So2

I've got a 20 liter vadai. I'm going to order a vinmetrica when i have the money. In the meantime, I have no way to measure free sulfites, but plan to age around 3 months in the barrel, which is almost neutral. Does anyone know approximately how much k meta I should add and the frequency of...

    Oak age

I know this topic has been discussed, but I see a lot of variance in the responses. I have a vadai 30 liter barrel. The third wine is in it currently, a cab/merlot. How long should the wine stay in this round? I was planning for three months. Also, for the next rounds, what's the typical and...

Other Sulfite level in oak barrel

I have a 23 liter oak barrel. My first wine went in the barrel for three weeks with good results. I have an amarone in there now which will stay another two weeks, for a total of six weeks. My next batch, walla walla cab/Merlot, will go in next for 12 weeks total. All kits. My issue: I don't...

    Cellar Craft Grape skins

Okay, should've asked before I did this. Started a cellar craft walla walla cab/merlot. For a change, I thought I'd forego putting the skins inside of the bag and instead just pour the skins directly into the must. Figured this would more closely resemble "real" winemaking and allow for greater...

    Barrel evaporation

Fairly newbie question here. Wine Angels seem to be taking a lot of my cab that's been in the barrel (first round) for three weeks. I seem to have to top up quite a bit every several days. Is this rate of evaporation common? Should I worry about headspace much while in the barrel, or is it...

    Other Which kit?

Got an empty carboy and primary and eyeing my next kit. Would love some input. I have either bottled, bulk aging or in the barrel the following: red mountain can, cellar craft amarone, and WE selection international Chilean Malbec/Shiraz. Whatever I get will need to fill the vadai (third...

    Frustration

Day 3 of soaking new vadai 23 liter barrel per instructions. Still large wet spot on outside between two hoops. Vadai says a hole may be under one of the hoops, which I'll need to remove. If the hole is found, I'll apply bees wax they're sending, which will take a few days to arrive. So, I'll...

    WineXpert WE selection intern'l Malbec/Shiraz

Made this kit and followed the directions, but bulked it a little more and with a little more oak. Bottled two months ago. Just popped my first bottle. Way young, but it still tastes great. Expecting great things with some bottle aging. Anyone else have good luck with this kit?

    Vadai barrel

Was quoted $57 shipping for a five gallon barrel from vadai. Asked if this was correct several times and they said it was. What price have other customers paid for barrel shipping? Seems high. I'm in Texas. Would like to buy from them, but may chose another vendor, morewine perhaps?

    Cellar Craft CC Showcase Amarone

Okay, got my amarone delivered and i plan to start the kit tonight. I confess, I haven't opened it yet or read the instructions, most of which I'll follow exactly. However, in reading all I could find on this forum about this kit, I'd like to make a few tweaks which have been reviewed favorably...

    WineXpert Cracked carboy

My luck lately. Opened my replacement six gallon glass carboy and inspected it. Found a small crack at the bottom. I filled it with water to see if the pressure would cause it to further crack. It didn't. Should I pitch it or do you think it may be safe? Getting too common with these glass carboys.
