    Yes, I have been adding the sulfite in the kit. Just not adding any additional.

    Rocky and Wade, thanks for the input. I guess to answer the question of why I haven't added in the past is; sometimes I feel less is more and maybe we tend to over-complicate simple things. As Rocky said it was made for 1000's of years without sulfites so why now? I am not opposed to adding it...

    If aging wines over 6 months. I have made close to 20 kits and have yet to add any. That said my wines have rarely made it past six months before they were sadly all gone. I now have enough to begin some extended aging but because I haven't used any type of sulfite I am fearing letting them go...

    Way better. I like that. Will say the WE Super Tuscan and the Amarone are pretty tasty. Haven't had the opportunity to try the RJ but if they are better as you say I am going to have a long 6 months + of torture.

    Found that staying with the higher end kits for WE was the way to go as well. Did have a couple of middle of the road kits I did early with good results. Based on reading the board it sounds like RJ is very comparable.

    Been a WE maker for a few years but they discontinued the crushendo kits so I gave RJ a try. Just bottled a Winery Valpolicella and a Cru Select platinum Barolo. Must say that the tasting during bottling had big potential. Can't wait to try them 6 months to a year from now.
