RJ Spagnols Orchard Breezin Kit- funny smell

Our local Wine Guy said we let it ferment too long. Must have been correct. We have made sure to rack it right around .998 and not let it sit any longer and all others turned out fine. We actually add 7 1/2 cups of sugar to them to bring them to around 11%. They turn out great. But don't make...

Making a dry red with high %abv

PeterZ- I was pretty sure we had the problem the pegged after reading both you and VCasey's replies. I am not 100% now. When Iweigh the amount of sugar we used it comes out to around 3.5 LBs. or a little less. I see most are using at least 4 and sometimes 5 LBs. Now I am somewhat concerned...

Making a dry red with high %abv

We sure did get to sure of ourselves and quit using the hydrometer. Won't make the mistake again. I am cutting down the sugar and using the hydrometer. Thank you so much!

Making a dry red with high %abv

By what I could find on the subject I assumed we had added too much sugar in error. That you for your advise. I am not sure when or where we started adding the 7.5 cups but the funny thing is it has worked fine on all but 3 kits. Anyway, we are only trying to get to a typical wine ABV of 9 to...

Making a dry red with high %abv

VCasey- need your expertise. We are fairly to new to wine making. Started around January this year and have loved every minute, however, last three Orchard Breezin' kits have had the "jet fuel" taste I have heard about. Strange as we think we do the same thing every time and add about 7 1/2 cups...

RJ Spagnols Orchard Breezin Kit- funny smell

Has anyone had an issue with a funny smell when making these kits? We have made roughly 20 kits and have never encountered this until now. The other kits we have made havesmelled like the fruit they were flavored with, such as the Blackberry Merlot smelled like Blackberries etc. The last two...

    WineXpert Green Apple Riesling

Though I am a novice and vcasey is much more on the expert side, I totally agree. I have actually never seen anyone add brown sugar. We have made quite a few kits and when I follow the advice on this forum orthe advice our localshop winemaker we have hadexcellentresults. I mean 100% success. Sure...

    RJ Spagnols New OB Kits?

Strange, mine had the secondary ferm. directions. It is more Rasberry with ours as well. I don't taste the Acai very much at all. The Rasberry comes through loud and clear. It is good though.

    RJ Spagnols New OB Kits?

I am drinking on the Orange Passion Fruit Grenache, pretty good stuff! SG was 1.080 when I started. Ended around 11% ABV. It is very good. I usually end up with an abv consistent with a regular wine on these and it turns out wonderful. Just my liking though!

RJ Spagnols Why add 1/2 F Pack to primary?

I understand, that does make sense! Thank you very much.

RJ Spagnols Why add 1/2 F Pack to primary?

I am curious. I have noticed that some use extra sugar and add 1/2 the F pack in the primary and 1/2 later. I usually just add extra sugar as directed on this site and by our hometown winemaker. What is the difference? Is one better? I just don't want to lose any flavor.

    RJ Spagnols New OB Kits?

I just bottled the Acai Rasberry Cab. It is very good. It is similar to the Blackberry Merlot, which I like a little better. We have the Orange Passion Fruit Grenache started now.

    WineXpert Green Apple Riesling

Ahh, yes the IM Green Apple YUMMY! It is one of my faves right now. The OB's are all good, I have the Green AppleGwertraminer, the Blackberry Merlot and the Acai Rasberry Cabernet Sauv. All are very good. I have to say I like the Island Mist Green Apple better but I think it is just the...

    WineXpert Green Apple Riesling

Very awesome Wade. I really don't ever want my husband to see that. He is already talking about plumbing the basement for a sink and closing in some rooms. Seriously, it is a very nice place you have.

    WineXpert Green Apple Riesling

One is just a simple spiced honey mead, one is the Joe's Ancient Orange Mead and The other is a grape cyser.

    WineXpert Green Apple Riesling

We just left it in the primary until it reached .999 then racked to carboy to clear but as you know your way works fine as well. It did take a few days longer with the added sugar. I am not sure how long. I just kept checking it until it reached the .999. I currently have the Acai Rasberry kit...

RJ Spagnols Island Mist vs Orchard Breezin

Okay, it appears these are just taking a few extra days to clear. Wade is correct, patience is the virtue here.

RJ Spagnols Island Mist vs Orchard Breezin

I guess the confusion for me is that we mixed everything exactly the same way we did our Island Mist Kit and the Island Mist wine was crystal clear.

RJ Spagnols Island Mist vs Orchard Breezin

Okay, as long as it sounds normal that is fine. Just wondered if time was what it needed. Thanks!!
