    Concord Grape Concentrate Suggestions

Well in honor of your birthday I started my first concord using your exact recipe! Its going great and no issues so far, so thanks again for the recipe...and for having it shared on your birthday. I am guessing that you probably officially turned 21 this time, you can legally enjoy your wine :)

    Concord Grape Concentrate Suggestions

Thanks! I did not know that about the equivalency of juice to lbs of fruit. That does help when looking at some other recipes for fruit that only use fresh fruit. This will be my first attempt at a wine from concentrate so hopefully it will go well. Thats why I was asking about any "tweeks"...

    Concord Grape Concentrate Suggestions

This sounds like my recipe...I am using 18 cans for 6 gallons and then sugar to get the SG up to the level I want. Yeast recommendations?

    Concord Grape Concentrate Suggestions

I am about to start a batch of Welches Concord Grape concentrate wine. I have read many of the recipes and picked one I like. With my recipe, I know I am going to: 1. use 3 cans per gallon for better body 2. start with a SG at 1.080 so I will get about 12% alcohol so it...

WineXpert Mueller-Thurgau & White Zinfandel Aging

Well, I managed to wait a full year of bulk aging and very glad I did! All three of my wines were very good and have been really popular with my friends. The White Zinfandel was especially good and compares with any White Zin I have purchased. The German Mueller Thrugau was very smooth and is a...

    Jujube something or other

Watching this one closely! Jericuri, I have three large jujube trees in my yard and they are loaded every summer. I sure hope this works out because I would love to try it next year! I always have wondered what to do with them because there are so many! Now I have a plan. Thanks for sharing this!

WineXpert Mueller-Thurgau & White Zinfandel Aging

Thanks Jim. After seeing your reply and the others in this thread, I have done some more research on this for sure and have discovered that while opinions vary on the length, the consensus seems to be that even the whites can benefit greatly from at least 6 months of bulk aging. As far as...

WineXpert Mueller-Thurgau & White Zinfandel Aging

That is good to know. I didn't realize that whites didn't benefit from longer bulk aging, but I guess that does make sense. I have two red kits I am about to start so I will just make plans to bulk age those for a year and then bottle....and whites just about 3 months to check for the level of...

WineXpert Mueller-Thurgau & White Zinfandel Aging

Thanks for the pointers! I hadn't really thought about the idea of tweaking it before you bottle. I guess since it was a high end kit i didn't think about any tweaking since the high end kits are supposed to be packaged to finish as it. Was really thinking about the bulk aging advantage as more...

WineXpert Mueller-Thurgau & White Zinfandel Aging

I have just finished up three different Wine Experts Grand Cru International kits. I did the German Mueller-Thurgau, the White Zinfandel, and the South African Chenin Blanc. I have seen different suggestions on aging them. Are there benefits to bulk aging these kits over bottling and aging them...

RJ Spagnols Grand Cru Intenational S African Chenin Blanc

Just started this kit I bought this one on a whim as well, as it was one of the last ones left at my local brew store. Glad to hear it turns out well and is an early drinker. I have made several kits, so this kit was fairly simple to start. Followed the directions exactly and didn't try to make...

    Concord Grape Recipe?

Does anyone have a good, proven recipe for making wine from Concord Grape concentrate? I had some that I tried at a wine tasting event awhile back and the person that brought it didnt make it and didnt have the recipe for it. It was very good..lightly sweet and you could definatley tell it was...

Other Chateau Classico kit - anyone do one?

I am about to start one of these kits...the Chateau Classico California White Zin. It was purchased for me as a gift and I have not received it yet, but it is supposed to arrive this week. The information indicates it is a 16 liter kit, so I am hoping that will help it to be a better quality...

    Other Chateau Classico Kits Question

Since my preference is white and blush wines, I am hoping you are correct SouthernChemist. I like red wines ok, but prefer the Shiraz types that are more fruity and not oaked, so this kit may work out fine. Kinda anxious to get started on it now just to see how it comes along.

    Other Chateau Classico Kits Question

Thanks Roger...I have read some threads from others who have bad or average experiences with paklab kits, but they were all the 7 and 10 liter kits. You were the first I have seen that did the 16 liter kits, which i was hoping would be better quality since it has a lot more juice concentrate...

    Other Chateau Classico Kits Question

I had a friend who ordered me a Chateau Classico kit from Ebay that is supposed to be a 16L kit of California White Zen. Has anyone done one of these kits? I have read some bad stories about low end wine kits, but this one has 16L of juice, so I was just wondering if anyone else had tried them...

    Mesquite Bean Wine

I was tempted to sweeten it, but I decided that I wanted to try one that comes out dry and then one that i will sweeten this fall when I do it again. It had such a great flavor when I was ready to bottle already that I thought I would leave well enough alone! It was perfectly clear, but I still...

RJ Spagnols Grand Cru Petite Sirah

Thanks Rocky! I think I will take your suggestions and prepare it as packed to make 6 gallons, but add the red raisins and some extra tannins in the secondary fermenter. May also add some bananas to give it that extra nice "feel" i the mouth. The kit is on sale, so I figure with those...
