    Topping off carboy

    I always top off with wine. Buy an inexpensive similar wine. As your stock grows you can use something you already made. If you top it off with juice you will be back sweetening your wine and you will need to stabilize it. No sugar added still has the natural sugars from the fruit.

    Just curious, out of the 8 carboys ... how many different finished wine types? How big is each blend in bottles? I'm thinking next year I may try something similar on a smaller scale.

    Well, this one I know a little about with 25 years in the HVAC business. Actually cooler temps can hold more moisture then warmer. I'm a little confused ... do you want it less humid in the winery? That will dry your air lock even faster. At 60-62% humidity it should take months to dry an...
