    I can tell you that I have made both the Old Vine Zin and Mountain Cab and they are my favorite!! These are my go to Reds. And for special occasions, the Barolo.

    BOTH of the CC cab and shiraz are excellent!!! The Red Mountain Cab is bold, upfront, and peppery!!! I love it!!

    When I first started making wines I never bulk aged. They went straight to the bottle to age. Now I bulk age for 5 or 6 months, than bottle. I believe on most kit instructions they usually have you bottle the wine. Kathie

    Truthfully, I would have gone and purchased a new primary bucket. But, you can also sanitize with "Oxi Clean". Cheaper that than the sterilizing powder you get from suppliers. Sounds like your on your way to a great wine!!! Good luck! Kathie

    Don't stress too much on number of days. Wines have a mind of their own at times. My rule of thumb for my wines I usually have the SG at .994 or lower, than rack. Seems to work for me. Kathie
