    WineXpert Chocolate Orange Port...that's right!

Lori, You have a wonderful wine supply business right outside Dallas!! "Fine Vine Wines" owned by a guy name George Cornelious. He has been my supplier for 10 yrs now. This is where I get my wine and port kits and supplies. He is a guy that when you call the store, he answers all your...

    WineXpert Chocolate Orange Port...that's right!

When I first started making wines I never bulk aged. They went straight to the bottle to age. Now I bulk age for 5 or 6 months, than bottle. I believe on most kit instructions they usually have you bottle the wine. Kathie

Truthfully, I would have gone and purchased a new primary bucket. But, you can also sanitize with "Oxi Clean". Cheaper that than the sterilizing powder you get from suppliers. Sounds like your on your way to a great wine!!! Good luck! Kathie

    WineXpert Diverging from kit instructions

It does seem odd to us to add the oak during the primary. But, it seems to work. haha I have taken oak cubes and added to the first racking for a week or 10 days, then racked again taking the cubes out. I got a nice oak flavor at the end. Maybe it was blind dumb luck, but it was a great...

    RJ Spagnols I Gotta Question?

Don't stress too much on number of days. Wines have a mind of their own at times. My rule of thumb for my wines I usually have the SG at .994 or lower, than rack. Seems to work for me. Kathie

    RJ Spagnols I Gotta Question?

Terro, I usually bulk age my wines for 6 months also. You don't have any problem with your wines not adding the clearing agents?? I am curious.. Kathie

    WineXpert Chemical question

    WineXpert primary/secondary time question

Don't get too hung up on the number of days. It depends on the wine and the SG readings mostly. If the SG is where it is supposed to be on the instructions, rack that puppy. Wine is pretty forgiving. I would rack it and stabilize it. Don't forget to beat the hell out of it to get the gasses...
