Started this one this morning. This will give me the Malbec and Brunello fermenting. The Primitivo is bulk againg and the Syrah is here on deck. Here are the pics. They arent great since they are off my iPhone and that thing does not take the best of pictures.

I have found when bottling with the wand, if you fill to the very top of the bottle with the wand all the way to the bottom, when you pull the wand out it is pretty close to the perfect level. I too would like to get the gravity filler though.
I could believe that about a Brunello since it is such a high acidity wine to begin with. I imagine it would take a while to come around. I know the Primitivo I tasted at 9 months was awesome.
Wine looks good. I just ordered the Syrah, the Brunello, and the Malbec from this series. I think they are a great bang for the buck and everything I hear seem to be good at 9 - 12 months. Thats perfect for letting the larger kits age properly.
I have decided to wait on this one until May when I can get grapes to create a grape pack for it. I tried to buy a grape pack, but noone would sell one. Looking forward to hearing all tasting notes on it.

I took some advice and kept the SG at 1.080. I dont think this will take that long to be drinkable. I mean its drinkable now at 30 days, but I know it will better at 60. I will wait for 60 and bottle. I am thinking a month after that and I will let people drink it. I dont see age playing that...
With the fruit wine I just did, I degased it right before the K-Meta and Sorbate and then backsweetened right after adding them. Then put it away for a while. Not sure if thats the best way, but it worked out well.
