    Oak in cherry wine

    I do a blend every year that is ~2/3 cherries and 1/3 raspberries and I add a package of french oak and love it. It is a personal taste choice though.

    Top up ?

    I think if you are still fermenting then topping off is not critical. You will be producing CO2 which will protect the wine from oxidation at this stage. Some of my wines sit in secondary for a few weeks under air lock as fermentation finishes up.

    Agreed, I made a Founders Series Carmenere that was incredible. Haven't found a Showcase sereies that I was blown away by yet, don't get me wrong, very good wines, just haven't found one to my tastes yet.

    That plan should get you a very nice clean finish. I find the Cheeky Monkey to have a bit bolder taste than other kits, which is why I like them so much. And you can't argue with the price!
