I just checked again this morning an hour after a good stirring and I'm at 1.098 so I thing it right. Makes me feel a bit better. Still worried though with just the thought of adding 2 extra liters to a kit. Never used raisins that have not come with the kit before. Should I do that anyway...
just started a cellar craft showecase zinfandel kit. after 23 liters and waiting a few hours the SG was at 1.122! I figured way to high for fermentation to have a chance to get to dry. So I added two more liters of water and dropped it to 1.100.

update: its been 15 days since start. I racked it from primary after 10 days or so and pitched a fresh batch of EC-118 at 1.008. Its now 1.003, 2 days ago it was 1.004. I'm not sure its going to get to 1.000. Any advise at this point? By now I should be racking it again and clearing but I...
So too late I got anxious and racked it to let it finish fermentation in a carboy. Now I realized this kit has a step during this time to add pectinase which is not in any other kit I have done. Will this hurt fermentation in any way if I add it now?
I'm on the upper end of that but under 75 the majority of the time. When you say need time to ferment, would you recommend primary or rack to secondary?

What about the 23 liter kits from Mosti-Mondiale. I would think the all juice kits would be step up but they seem to get very little attention, why might that be?
