First timer Why does my fermenting wine smell like sulfur?. I’m currently on day 6 of the process, but my fermenting room has began to reek of sulfur. The first 3 days my primary smelled of fruit, but around day 4 it turned into a raunchy sulfur smell that has engulfed the entire room. I am using a Wine Xpert Cabernet kit. Should I be worried, is this normal or are there ways to fix the problem?

do you mainly do sweet country wines, traditional wines are grape only, country are all others wines,

I have Baca Noir vines up on 10 foot high arbors.
I CLARIFY my wine, after first racking, with egg whites. Three egg whites and three table spoons of water and a pinch of salt, whip really good, add to five gallon carboy, put on a bubbler, and after about a week the wine is nice and clear. Egg whites is what the French use to clarify barrels of wine. (Also removes yeasty flavor)

I’ll have to give that a try. Sounds like a good way to eliminate the chemicals, although I’m not sure the clarifier that I use would be considered a chemical. Isn’t that stuff made from seashells?

Hi I’m new to the group and home brewing. Starting with elderberry wine. I have got past 1st fermentation and my acid level is ph of 2.92. Should I adjust this or leave it and if the former how best?

I usually adjust the acid before fermenting, but you're past that point. Post fermentation, it's best to do a bench test where you give several glasses slightly different amounts. Select the one you like best by taste.

I'm a member of a non-commercial grape buying co-op centered in Durham NC. We'd like to post a message to see if anyone else in our area is interested in purchasing West Coast USA grapes this fall.

Sorry for the late response, I am in the Glen Ellyn area. I would drive up to Crystal Lake every spring with a trailer to buy dozens of buckets of Chilean Juice buckets.
