I will be making a carmenere for the first time. For those of you who have made this before, what yeast would you recommend?

I, also, like RC-212 for reds, but make sure that you have some DAP on hand to prevent H₂S production during primary fermentation. The first time I used RC-212 my wife, who has the nose of a beagle, told me to take my hobby outside to the shed.
