I've been looking at several wine recipies, and most don't increase the yeast when the size of the batch is increased. I am making a 15 gallon batch of blackberry/raspberry. Do I need to increase the yeast? or will one pack be ok? Also, I'm planning on letting that mix sit in a 10 gallon quantity until I move it to the secondary with the airlock. I used like 4-5 gallons of berries-20 pounds of sugar and assume I can just add 5 gallons of water...
Thanks
Kevin

I would use 2 packets for 15 gallons although they say that one packets will work, I just prefer not to take that chance.

Yeah - i think the directions say 1 packet is good for up to 5-6 gallons - but 2 packets should be sufficient enough.

I was reading Wade's mind and came up with two packs. One will work as your yeast will multiply but it would add another day or two to the process.
