On a different thread I'm asking about timing of things for my Grand Cru Pinot Noir. This question is about the yeast they provided in the kit. Seems a neutral (ie. conservative) yeast, Lalvin EC-1118. But the Lalvin site recommends their Bourgovin RC-212 for reds like this. Thoughts and suggestions when doing this on a 10L kit wine?

Made yeast change

Just like me, I ignore the experts who put the kits together and switched out the EC-1118 for the RC 212. Both Lalvin yeasts, but their site talks about the RC 212 being pretty much made for Pinot Noir.

I think the EC-1118 has a wider temp range for fermentation and doesn't need as much nutrient, but you pay the price in a more generic fermentation it sounds like. I'll update here how it ends up!
