I was curious if you only make a 1gallon or say 3gallon batch, do you still use the whole packet of yeast or can you split it assume a whole pack is for 6 gallons?
 
Just use the whole thing. You can split it I have. Just store in freezer bag and use the rest sooner then later.
 
Yeast's population double in size at a rapid rate in a healthy ferment. You may theoretically accelerate fermentation, but I doubt the impact would be significant.
 
he's right it will accelerate the fermentation. But in a good way. yeast double is size every x amount of time. Once it hits a certain density it's all about taking sugar and making alcohol and not reproducing. That's the point you want your yeast stain to be at. Less stress on the yeast yada yada. I'm sure there is such thing as adding to much yeast. But that won't happen with 1 gallon and a packet of yeast.
