The wine is Bronze Muscadine with a pH of 2.9. Would it be wise to add Potassium BiCarbonate to muscadine? And then cold stabilize it?

Has anyone done this before?

That is abnormally low.

Are you positive about that reading?

What does the TA look like?

Unfortunately it is correct, degassed completely it smells beautiful, it tastes very tart/sour. Think it had alot of grapes that weren't ready. This was my first muscadine and I didn't understand the grape like I do now. The TA 8.2 with the small kit I will use the burette tonite to get a tighter value.
 
@JohnT When I went to pick these, the man that owns the small vineyard had 4
or 5 vines. Instead of picking, he laid down tarps and vigorously shook the vine, this also knocked off a tremendous amount of debris. I tried to spray all I could off the grapes. I then rolled and bounced them on a wire mesh to dry, even so, I still had a lot of little bits and pieces.

I will pick the next ones by hand. I feel the shaking technique put a lot of small unripe grapes in with the lot.
