I am making the welch's grape wine [from recipe on here & also 1st try at making a wine other then a kit]
Please correct me if I am wrong - after adding sorbate - no matter what I add to wine I don't have to add more sobate?? [added no more yeast]
 
The last step in winemaking is adding sorbate.
Sorbate prevents yeast from multiplying, and therefore
is added as the last step (together with pot meta) before bottling.

Make sure your wine is clear and finished, then add
sugar (if you want to make a sweet wine) and add sulphite and sorbate.
Wait a few weeks (to see if indeed all fermentation
has stopped) and bottle.
