Have it going in primary now and seems to be doing well. Day 11 and have punched down bag of skins every day, has almost stopped fermentation at this point. Three more days and I will check the S.G. and if it is within range will re-rack to carboy. Smells really good even now. Will probably age this one at least one year, more if there is any left. Just curious if anyone else has made this one yet and what you think of it ?
 
Do I need to let this one sit longer than the instructions say, between day 40-54 in carboy ? I plan on ageing in bottle for at least a year, maybe longer cause from prior experience these reds just keep getting better. Will the # 9 corks be ok for longer than 1.5 years or should I use synthetic ?

This is what I do, Your Mileage May Vary, and you can do whatever you want, it's your wine. For Kits: After I rack to carboy, I walk away with a topped up carboy for 2-4 weeks. (yes, I know some folks worry about off-flavors developing, but with kits I haven't had issues). Then rack, add k-meta and oak wait about 3 months. Rack, decide if it needs something else wait about 3 months rack, add K-meta. (repeat up to 1 year from yeast pitch).
