Hi guys, im aware that generally speaking bulk aging is better, my wine cellar is about 59F but its setup for bottles. Right now my wine is aging in bulk at about 66F, which would be better to store given the fact that I can store bottles cooler but not carboys.
 
I find consistent temperatures matter a lot more than a few degrees.
Well both are pretty constant I would say, the wine cellar is under the basement stairs completely underground so I'll be testing the temps this summer since I built it over winter...i suspect they will be favorable and constant. Temps in the basement where the carboys are dont really get much warmer in the summer than they are now.
