I've got 7 gal of Frontenac Blanc aging now for 5 months, it's my first white from grapes, I cold stabilized at around 30 degrees F. for a month and boy did it drop out piles of Crystals, it's been very clear for a few months now and I'm on the fence about the best time to bottle it up. I've been told 4 to 6 months of aging a white. I understand the benefits of aging a red much longer but I'm curious about how long are you all aging your whites?
 
Commercial wineries will be bottling 2021 whites soonish, March/April. They do not bulk age long - approx 7 months from field to bottle. I know of some wineries picking for rose in early November and bottling in early February.
I'm assuming you started this last August, yes? If you think it is stable, go on and bottle is my advice.
Reds need longer aging for oaking, developing flavors, softening tannins; not so with whites.
