So I’m about to rack and get rid of the gross Lees. Pressed three days ago. I have (5) 35 ml vile’s of WLP675 with (5) 4.5 gram packets of optimalo.

Couple questions. I’m trying to figure out what the dosage is, in regards to how many gallons a single vile is good for (This is my first solo press). I’ve come across a multitude to posts regarding the lack of confidence in this liquid culture to Initiate and finish malolactic fermentation.

I’m at odds at what to do here? Do you guys recommend just sulfiting now and continue with secondary fermentation without malo? Should I just use what I have? I wish I knew about the poor results from this culture before racking time. I’ve borderline questioned myself on whether or not doing an MLF for my first wine may have been a bit overboard. Thoughts? Thanks In advance.
