I'm a few days away from my wine kit's instruction to rack into bottles. Due to limited storage space, I'm planning to age the wine in the carboy and bottle when it has peaked.
Per my kit's instructions, there's a bit of sediment currently at the bottom of the carboy. My question is, since I'm aging in a carboy, should I just leave it as-is with the sediment in the carboy, or should I rack into a clean carboy for aging? I'm fine doing either, but would just as soon leave it as-is if the sediment won't negatively affect the flavor.
