When to sorbate?

If I am going to bulk age my kit wine, should I sorbate before aging or at bottleing?

Unless you're going to backsweeten or add an additional blend you don't need to sorbate.

Ok, so I think I will rack it and add the 4 gm of Kmet that came with the kit. Is that the right amount and does it make sense?

Yes, follow the instructions of the kit. If you kit came with an f-pack then you need to add sorbate.

What ever comes with the kit is the correct amount. Just make sure to add more every 3-4 months of bulk aging as it dissipates leaving your wine un protected.
