hello everyone, i am getting ready to bottle my 5 gallon of strawberry wine. could someone tell me when i should ad the campden tablets and the potassium sorbate. the thing i am confused about is, i plan on bottling half of it sweet and half of it dry. my sg right now is about .992

so you are going to backsweeten half the batch? with what? dextrose? or something non-fermentable?

i'm only on my first wine kit and my sulfite is pre-measured and for 6 gallons, so I can't help you on that. but depending on how you are sweetening the wine, should determine how much campden/sulfiting is needed to prevent re-newed fermentation.
