I did a MLF once. Didn't see much difference. I am using juices now and rarely use fresh grapes anymore. Doubt I will bother with MLF again.

I will give the Avanti a shot. It's only $12 for 50g. Even if I dont use the entire amount due to spoilage that's not a big loss!

Pasteur Red might be my other choice.

MLF works only if the wine has a significant amount of malic acid -- if it doesn't, there's nothing for the MLB to eat.

That I do recall. But I don't remember if there is a way of measure malic acid in order to determine an MLF
