What grapes to pick first?

Hi,
I have marquette at 25 brixs Chardonnay 19 Reisling 20 pinot noir 24 cab franc 22 . What should I leave hang and what should I ferment first?

what are the acid and ph numbers. also are the seeds brown and crunchy? brix is not the only number to watch. what is the weather forecast for the next few weeks
