Hi there !

After adding Pectinase to a Red Must , is it possible to wait more than

12 Hours ?! For example , 20 Hours ?!

It will be ok to wait longer than 12 hours. Although I wouldn't wait to long in fear of contamination (sulfite will help with this). 20 hours would be fine.

Sure I usually wait 24 hrs before adding yeast

Normally I add sulphite and pectic enzyme to my must and add the yeast starter a day later.

The reason is that yeast may inhibit the pectic enzymes.

These stories will explain when and why to add the pectic enzyme.

So I wait 24 hour before adding the yeast to my must.
Perfectly acceptable.
