It seems that everyone is out of stock of Opti Malo Plus. I have my VP-41 and want to start MLF on my Pinot Noir. What is the opinion on starting without the nutrient? Its topped up, racked off of the gross lees, at .998 s.g., and at 3.35 ph at this time. I used RC212 which should be tolerant of concurrent MLF. As always, thanks.

I think you will be fine. I only use Acti-ML to rehydrate and never the other nutrients. Your numbers look friendly enough I'd just sprinkle it! You can always add nutrients later if it turns out to be stuck, they should get them back in stock within a month or two. I used RC-212 and CH35 and my pH was 3.33 on my PN Spring bucket and grapes, it worked fine once I started stirring it on a regular basis.

I added VP41 to my skins and must only rehydrated with water 24hrs after primary fermentation began. Worked just fine without adding any additional nutrients.
