I just finished fermentation, they gave 60G of oak dust (Powder) and 90G of American oak cubes, does this not seem excessive? Typically most kits give 30G oak cubes. At any rate I’m thinking to use one of my 50G hungarian oak staves. Has anyone made a Nebbiolo with American oak before?
 
I had to convert that 90 grams to ounces (3.1 ounces). It does sound a little bit much, BUTTT maybe not, given the generally short amount of time that most kits have you keep the oak in the wine. If you truly think it might be to much, only put half or maybe three fourths of it in, you can always add more. also remember that the oak will fall off given time.

Personally, I would put it all in and leave for three months, wine kits can use as much body help as they can get.
