I am on my just on my 3rd batch of wine. The instructions call for racking a second time into another glass carboy. I haven't done this in the past and my wine has cleared nicely. Is it important?
I have found that it does help removing the lees from the wine prior to aging and insuring that it does not give it an off flavor. I have done it both ways myself and think it helps degas/clarification as well.
