I'm in the process of brewing 15 gal of cider (lets call it apfelwein for the sake of being in this forum). Got the cider frozen from an orchard for cheap. It's uv pasteurized. Smelled a little funny but tasted fine when thawed. 3 days ago added campden tablets and yeast nutrient, 2.5 days ago added pectic enzyme, 2 days ago pitched yeast.

Og 1.070. yeast s-04

Within 24 hours it developed 1/8" of dark froth that smells absolutely rancid. like sewage almost. Can't eat for a couple hours after smelling it...

Is it junk?

If it was mine think I would stir it up good and let it be. Stir at least once a day. How much nutrient did you give it? It could possibly need more. Arne.

If it smells like sewage I'd bet SO2. I'm with Arne, good stir. if it is really bad, poor it back and forth into another bucket and really stir it up. Hopefully the SO2 flashes off.
