When it comes time for topping off which would be better, water or a similar purchased wine. Seems funny to add water even though it would be a small amount. It's my first kit wine of Chianti.

Try to use a similar wine. You can even buy a box wine to top off. I have used water in the past but it was only a small amount and that was in a 5 gallon carboy.

Use a wine and you'll be happy you did.
 
I would never top off with water.

If you are using a plastic Better Bottle carboy you can buy a small ratcheted cargo tie down strap, wrap the strap around the bottle several times, then ratchet it down until the wine level is where you want it. Only do this if you need to raise the level a cup or two, you don't want the Better Bottle to look like a coke bottle.
