Too much wine for carboy...

If all steps were followed correctly and everything was kept very clean, would the extra wine be okay to drink now?
 
How much wine is "too much"? If you have a liter (a quart) left over you could bottle that, and if you have a couple of liters you could bottle that too. If it's just a cup or so then I would drink it...
 
I generally TRY to make a bit too much, and bottle it in Grolsh type bottles. I use this over time, on the batch, for topping up, then sample the remainder ;-)
 
I have six gallon carboys, three gallon carboys, 1 gallon jugs, and 32oz canning jars that hold left-overs. Anything less than 32oz, gets drank. :)

Below is my Pineapple, Mango, Lime wine. 3 gal, 1 gal, and (2) 32oz.

I find it so important to have different size containers. I also have 1/2 and 3/4 gallon carboys and do a lot of bottling with air gaps for topping up. I have yet to be able to understand the outcome of a wine by tasting right after fermentation. Guess that is something I will have to learn.
 
It is hard to tell immediately after fermentation most times. I do have a 3 gallon batch of Plum that is already at that point (In less than 60 days) that I could bottle it. We've already decided it needs no back-sweetening and it's just about crystal clear. So I imagine before fall this one will be bottled.
The sharp edge of a wine hides so much many times but if you rack every 3 months and keep tabs on it you can track the progression. (If your memory and notes are good.)

Dang David, that really looks good!!! Nice and clear, really pretty color, hope it tastes as good as it looks!

It is/was surprisingly good. I got the flavor combination out of a flavor bible. (a book that lists flavors that have affinities to each other) My GF loves pineapples, mangoes, and limes. (she is Brazilian, what do you expect!) She doesn't drink, but thought it would be good to give to her friends so I made it.

It's now 18 months old and fantastic.

Definitely best served at refrigerator temperatures. (35F)
