Greetings:
I have a carboy filled and just added the fining and clearings. It says 7 to 10 days before bottling. Now should I stir it each day or let it be ?

Let it be. All that stirring would do is mix the sediment back into the wine, and that's what you are trying to get rid of.
 
the concept of string is to provide oxygen to the yeast and get a clean fermentation. if done less that once a day, low probability but there is a risk of stuck fermentation or off odors. small chance though.
