I have two one gallon batches of welch's which have been in secondary with airlock on for about 8 days now. I had them in the same jugs for 4 days prior to fitting airlock. I had a napkin over the neck with a rubber band securing it. Once I fitted airlock, the foaming had just about ceased and fermentation appeared to have slowed down considerably. The airlocks were pretty active at first then slowed down. Now there is a sediment in the bottom of the jugs probably 1/4" deep if that. I don't see many bubbles coming up the side of the jug anymore and the solution has really cleared up from the cloudy look it had. Is the wine doing what it should be? Should I go ahead and rack into another sterilized 1 gallon jug and refit airlock?
