Does the cap falling always coincide with being time to press? I don't want to risk oxygen exposure...if brix still 0 can I completely fermentation after pressing??
 
A falling cap is a sign of fermentation slowing (for whatever reason).

It could be that fermentation is at its end or it could also mean that fermentation may have slowed due to, say, your must cooling.

Take hydrometer thermometer readings to be sure.
