Can anyone who has used flex tanks give me a feel for how long to leave a Pinot noir in a flex tank? Thx.

First question is how many gallons of Pinot do you have and how big is the Flex Tank?

15 gallons in 15 gallon tank
I have two 15G and have not done any PN in mine but have done Bordeaux grapes. They have gone 6-12 months easily (lots of tannin to smooth out) PN maybe on the 6 month side. Taste along the way and make sure to keep your SO2 levels up because they will drop as fast as a small barrel.
