Do you test for sulfite before adding the 1/4 teaspoon of Kmeta every 3-4 months or just add it?

Is there a problem with getting too much in the wine.
Or is there the bigger concern of not enough?

Bigger of not enough but I usually test. For what we add we are generally below what any commercial wine contains for sulfites.

Wade, approximately how much will 1/4 tsp addition raise the level of 6 gallons? I just bought the Accuvin SO2tester but do not have pH paper yet.

Approximately 50 ppm of free S02 for the first time addition and each additional dose will slowly decrease as it will bind at lesser rates for each time you add it.
