Step feeding question

In a moment of weakness I bought 8lbs of plums from the grocery store that were reduced to .25 a lb. I have a personal rule never to buy grocery store fruit and produce for wine. Flavor is "ok". Oh well...

Decided to make a plum dessert wine to deal with my indiscretion - and give me my first experience with step feeding.

My question - I'm using 1118 and wondering if it's worth the bit of time to make invert sugar for step feeding? My gut says yes but I don't know.
