I am about to make apple wine and would like to add spices. During what part of the process should I add things like cinnamon sticks and clove?
 
I think post fermentation would be best once wine is clear and stable. at this stage you can do taste test as time progresses to level of spice desired. be careful of clove additions can be powerful.
 
I used four sticks of cinnamon and two teaspoons of clove during fermentation of 5g of cider. The clove is powerful and can easily be overdone. I might do less clove next time.
 
We use 3-4 sticks of cinnamon and only 3 ish cloves to 5 gals. Cloves can over power your apple wine very quickly. So easy to add more if desired, Not easy to get rid if you over clove. We add them when the wine is mostly clear. Roy
