I have read in several threads that you do not add sorbate after MLF. My question is - How can I stabilize after back sweetening without the sorbate? I have three red wines in carboys from the fall and would like to back sweeten 2 of them.

Simple, You dont backsweeten wines that you put thru MLF.
Question is what wine do you back sweeten. Big reds NOT fruit wines are what we do MLF on.
