Hi Everyone. On my second wine making adventure, this time doing a 5 gallons batch from concentrated juices. I am planning to move the wine to a secondary 5 gal carboy in a few days but there is something I need to ask you since on some instructables I've read that you don't take sediments to the secondary fermenter, but others say you should. Please tell me what is the correct way...thanks in advance!

the first rack should have gross lees behind especially for wiine made from grapes. the secondary carboy will still drop lees referred to as fie lees. some wine maker feel that time spent on fine lee will improve there wine. if doing MLF fine lees are required as you stir the wine. MY suggestion is do not take lees from the primary to the secondary.
