Hi:

I have a 1 gallon jug which contains a 50 gram sulphite / water solution, used for equipment sanitation. I have only started using it yesterday, yet the cap is already showing signs of rust! I will try to find another cap ASAP, but I am currently using this jug twice daily. Should I be worried about the slight rust affecting the sanitation and risk spoiling the wine batch?

Don't worry to much about it.

Metal may effect the clearing of the wine but you are using it for
sanitation and not for contact with the must itself.

The chance that metal particles will get into the wine
is soo small that I would not worry about it.

If it does bother you however put a piece of plastic
(plastic bag or household plastic) over the bottle
instead of the metal cap and secure it with a rubber band.
