I have a EP Pinot Noir that has been 30 days since I pitched the yeast.....Its been sitting in secondary now, and 1 week ago the S.G. was .998 at 74 degrees......I tested it today and its the same.....Should I continue on to stabilizing and clearing, or let it go longer......If I correct the hydrometer for temp. .998 at 74 is closer to 1.00
