Cap puncher, that's a good idea too. Does ash need to be sealed? I know you sealed your because I've seen that thread before. Id rather not seal it since the cost of ez-do just adds to the expense ($40 for one point), but it's an option.
I don’t think you have to seal the Ash if you chose not too. The density of ash is very similar to beechwood. You don’t have to seal that I know. Ash is pretty neutral for flavor. They even make Ash barrels that are supposed to be like neutral barrels (I have a 20L).

I you go to a hardwood lumber place, they may have other option not too pricey. I went looking for beech or oak and came back with Ash because the one they had was the thickness I wanted.
