Hello, i am doing a cab /merlot and currently going through mlf.Today, after 4 day of mlf and about .75 inch of fine lees sediment at the bottom i noticed the wine has a pronunced taste of lees/ yeast. At this point should i rack the wine ?(this would be the second racking).The mlf seems it has slowed down considerably although the temp and ph are whitin range. Also i noticed the tannins are v noticeable and i was looking to add egg whites.When or should i adress the strong tannins at this early stage?Thank you.
 
The lees taste should reduce to nothing after racking. How long? Each wine is different, so there is no predictable time table.

IMO wait on the egg whites. As @cmason1957 said, the wine is undergoing a lot of rapid changes. Let it settle a bit before reducing tannins, as you can always remove tannins, but it's harder to put back in.
