I am new to wine making and wanted some opinions on racking. I am making wine from fresh juice. I am using 5-gal glass carboys and have already done my first racking after about two weeks. My question is how many times do you normally rack and at what time intervals. I did a search on the forum for this info but wanted to get some of your suggestions.

I am making an amarone with italian juice.

It really depends on how much solids the wine in question has. I have made a few that only required a few rackings before there was nothing to rack off of anymore. For the most part I usually rack my wine about 4-5 times. It also depends on how often you rack. Some people rack pretty often and are worried about their wine sitting on lees but these lees being there can have desireable effects like adding more complexity and mouthfeel to your wine. If interested do a search on Sur lees aging on Google.
