Question on sugar and water

Hello this is the first time my friend and I have tried to make wine, and I think we are a bit ambitious. We are using all fresh Fruit made up of about 30 pomegranates, 6ish lbs red grapes, 2 lemons, a grapefruit, a tangerine, and 3 plums. All of it juiced (it made about 2 gallons of juice). We put in the Crushed Campden. We have also added 1 gallon of water, and about 2 1/2 cups sugar.

I guess my question is do I need more water and/ or sugar. And if so How much do you suggest. I have an uncle that has has experience with wine making and he thinks we need quite a but more water.
 
Yes. I Believe on one of the scales the hydrometer is floating at about 55 if thats what you mean. 16, 55, 8 are the 3 readings on the meter, But we might be reading it wrong.

also their is no yeast at this point. that is today

correction it is at 1.053-1.055 if I am reading it right



Update:

We decided to add a gallon of water, and enough sugar to bring the meter to 1.065 (thanks to the may guides on reading the meter ;) )
